My Romesco Sauce

Ingredients: 

2 large bell peppers, roasted, peeled and seeded
1 piece of bread, stale is ok, torn
1/4 c toasted slivered almonds
1 T tomato paste
1/2 T chopped chipotle in adobo
1 clove garlic
1 T sherry vinegar
1 T good olive oil
Zest & juice of 1/2 a lemon
Salt and pepper to taste


Directions

  1. Puree everything in a food processor
  2. Adjust seasoning
