Panera Bread's Creamy Potato Soup

Ingredients: 

6 c. chicken broth
6 c. potatoes, peeled and cubed
1/2 tsp. seasoning salt
1/4 tsp. white pepper
1/4 tsp. ground red pepper
1 (8 ounce) pkg. cream cheese, cut into chunks, room temperature
4 slices bacon, cooked and crumbled


Directions

  1. Combine broth, potatoes, and spices.  Boil on medium heat until potatoes are tender.
  2. Smash a few of the potatoes to release their starch for thickening.  It's a matter of texture preference.
  3. Reduce heat to low.  Add cream cheese and bacon.  Heat, stirring frequently, until cheese melts.  Serve.
