Parmesan Roasted Brussels Sprouts

Ingredients: 

• 1 lb Brussels sprouts
• 2 Tbsp extra-virgin olive oil
• Salt
• Black pepper
• ½ cup shredded parmesan


Directions

  1. Preheat oven to 400° F.
  2. Wash and trim Brussels sprouts, removing loose outer leaves. Remove bottoms and slice in half.
  3. In a bowl, toss Brussels sprouts with olive oil, salt and pepper.
  4. Spread sprouts onto a baking dish.
  5. Bake in oven, tossing once, until fork pierces sprouts easily and sprouts are starting to caramelize.
  6. Sprinkle on parmesan and bake additionally until cheese is melted.
