1 cup lukewarm water
1 tablespoon plus 1 teaspoon extra-virgin olive oil, divided
1 package active dry yeast, (2 1/4 teaspoons)
1 teaspoon sugar
1 1/2-2 cups all-purpose flour
1 cup whole-wheat flour
3/4 cup finely shredded Parmigiano-Reggiano cheese
1 1/4 teaspoons salt
