Passover Apple Cake

Ingredients: 

Batter:
6 eggs
2 cups sugar
1 cup oil
2 cups cake flour (cake meal)
2 tsp potato starch
Salt
Filling:
8 large, slices
3/4 cups sugar
2 tsp cinnamon
Juice of lemon

  1. Preheat oven to 350 & grease 9x12  pan
  2. Mix eggs & sugar together. 
  3. Add oil & dry ingredients.
  4. Fill pan with half of batter. 
  5. Mix all ingredients for filling & add to batter in the pan. 
  6. Add the rest of the batter. 
  7. Sprinkle the top with 2 tsp sugar & cinnamon. 
  8. Bake 1 1/4 hours. 
  9. Cool cake & leave out. Otherwise, it gets mushy.
