Passover Poato Kugel

Ingredients: 

8 medium Yukon gold potatoes. Peeled & coarsely shredded
2 medium-large onions, coarsely shredded
5 large eggs
3/4 cups matzoh meal1/2 tsp salt
2 tsp ground pepper
2 tsp garlic powder
paprika for sprinkling
Thick sea salt
1/3 cup olive oil


  1. Preheat oven to 350. 
  2. When oven is preheated, add 1/3 cup olive oil to 9x13 Pyrex dish & put into oven to heat up. 
  3. Whisk eggs together in a large bowl. 
  4. Add shredded potato, onion, matzoh meal, salt, pepper, & garlic powder. Mix until combined. 
  5. When oil has been heating about 10 min, remove from oven. Add small spoon of potato mixture & if it sizzles, it's hot enough. If not, return to oven for a few min. 
  6. When oil is ready, add entire potato mixture & spread evenly with spatula. 
  7. Sprinle paprika & thick sea salt on top. 
  8. Bake 40-50 min, until crispy around edges & golden brown on top. 
  9. Allow ro cool before cutting.
