The perfect beef lasagne

Ingredients: 

2 large onions, peeled
2 large carrots, peeled
4 cloves garlic, peeled and finely sliced
6 Tbsp olive oil
1 Kg free range lean beef mince
2 full sprigs fresh thyme
60ml red wine
1 410g tin tomato purée
1 400g tin chopped tomatoes
125ml good quality beef stock
1 tsp tomato paste
1 cup balsamic vinegar
freshly ground black pepper
sea salt, to taste
75g butter
75g flour, plus extra for dusting
500ml milk
300 to 400g dried pasta sheets
cheddar, grated for the top
parmesan, grated for the top
paprika, ground
breadcrumbs, for the top crust
