2 cans (6 oz each) Pineapple juice (1-1/2 cups)
2 packages (3 oz each) or 1 package (6 oz) JELL-O cherry flavored gelatin
1/2 tsp. ground nutmeg
1 cup frozen dark sweet cherries, thawed, quartered and drained
1/2 cup chopped pecans
Prep: 20 min. Serves: 12-14
Drain pineapple, reserve juice. Heat reserved juice plus canned pineapples juice to a boiling. Add gelatin; stir at least 2 min to completely dissolve. Chill until mixture thickens slightly.
Fold in pineapple, cherries and pecans. Spoon into 12 to 14 foil-lined muffin cups, lightly sprayed with non-stick cooking spray. Chill until firm. Store leftover gelatin in refrigerator.
