Erin, I looked at your Sour Cream Pork Chops recipe and modified it to work for a quick meal...
Pan fry pork chops with salt and pepper and olive oil
In a separate pan heat olive oil, 1/4 cup chopped red pepper and a handful of fresh basil leaf chopped.
Sautee for about ten minutes then add sour cream and whisk.
After all chops are cooked, deglaze pan with water and add to sour cream mixture. I added natures Seasoning which Katie seems to do okay on.
Side dishes...Quinoa Pasta with Velveeta, milk, and butter.....and buttered corn.
It was a huge hit!
