1 lb beets, peeled and cut into 1/2-inch wedges
4 Tbsp olive oil
salt and pepper
2 oranges, cut into large chunks
6 cups baby arugula (5 oz)
4 bone-in pork chops (1 inch thick; about 2 lbs total)
1 Tbsp dried oregano
1 Tbsp dried thyme
