Portobello Stroganoff

Ingredients: 

2 tbsp corn starch
2 cups cold water
8 tbsp olive oil
1 large onion, diced
4 cloves garlic, minced
3 large portabello mushrooms, chopped
1 tbsp thyme
2 tsp salt
1 cup red wine
1 tbsp paprika
1/2 cup nutritional yeast
1/2 cup almond milk
2 tsp dijon mustard
1 box whole wheat pasta


  1. saute onion and garlic in olive oil for several minutes
  2. add mushrooms and saute for several more minutes until soft
  3. mix cornstarch with water and set aside
  4. meanwhile prepare pasta according to package directions
  5. Add salt, wine and paprika to the mushrooms and continue to saute for several more minutes
  6. lower heat and add cornstarch mixture and allow to thicken for several more minutes
  7. add nutritional yeast and almond milk.  stir and cook for a few more minutes and then set aside
  8. strain pasta
  9. serve pasta topped with mushroom sauce
