4 large Idaho potatoes, scrubbed

1 egg, beaten

2 Tbsp. grated parmesan cheese

1 Tbsp. extra virgin olive oil

1 Tbsp. unsalted butter, melted

1 tsp. salt

1/4 tsp. ground black pepper

1 1/2 c. flour
