1 med onion chopped
1 head large cauliflower
1 large potato peeled and diced
1/2 t salt
4 c veg stock
1 1/2 cup almond milk
1 cup cheeze
Pour oil in pot over med high heat
Add onion and sauté
Add cauliflower and potato salt and stock and bring to boil
Reduce heat and simmer 20 min
Set aside to cool
Pour in blender and quickly purée
Return soup to pot and add milk. Bring to boil over med heat stirring constantly
Add cheese and season and serve immediately
Garnish with cheese
