Potato & Split Pea Soup

Ingredients: 

2 tbsp vegetable oil
2 unpeeled mealy potatoes, diced
2 onions, diced
scant 1/3 cup split green peas
4 cups vegetable stock
5 tbsp grated Gruyere cheese
salt and pepper

Croutons:
3 tbsp butter
1 garlic clove, crushed
1 tbsp chopped parsley
1 thick slice white bread, cubed
