Prawn & Chorizo Faux Spanish Rice Recipe

Ingredients: 

6 prawns, peeled and devined, keep the tails on
1 medium free range chicken breast, diced
1 medium chorizo, skin off and diced
1/2 head of cauliflower, broken into florets
1/2 brown onion, chopped
1/2 red pepper, chopped
1/2 long red chili,chopped
3 garlic cloves, chopped
1 tsp sweet paprika
1 tsp smoked paprika (or use all sweet)
1/4 tsp saffron powder or a few saffron threads (optional)
1/2 lemon
1/4 cup white wine
1 tbsp tomato paste
1/2 cup chicken or vegetable stock
ghee
extra virgin olive oil
sea salt
black pepper
