Red Pepper Pasta

Ingredients: 

1/4 cup olive oil
3 minced cloves garlic
kosher salt 1/2 teaspoon
1/2 tsp crushed pepper
1 cup roasted red peppers
3/4 cup whole ricotta
1/2 cup grated Parmesan
1 lb shrimp. peeled, devined
8 oz linguine
1/4 cup slivered basil


  1. Combine oil, garlic, salt, and crushed red peppers in a 1 cup liquid measuring cup.  Pour half of mixture into blender or food processor.  Add roasted peppers, ricotta and Romano cheese.  Cover and blend until smooth, if necessary, add1-2 tbsp water for good consistently.  Set aside.
  2. Combine remaining oil mixture and shrimp in medium bowl;  toss to coat.  Thread shrimp onto skewers.
  3. Cook past.  Reserve 
  4. Grill shrimp .  Add sauce to hot cooked pasta and then add water until silky.  Serve together and sprinkle with basil.
