Rice Noodles with Vegetable Chile Sauce

Notes: 

Serves 4

Ingredients: 

1 TB oil
1 onion, chopped
2 garlic cloves, crushed
1 fresh red chile, finely chopped
1 red pepper, diced
2 carrots, finely chopped
6 oz baby corn, halved
8 oz sliced bamboo shoots, rinsed
14 oz can kidney beans
1 1/4 c tomato sauce
1 TB soy sauce
1 tsp ground coriander
9 oz rice noodles
2 TB cilantro, chopped
Salt and pepper


  1. Saute onion, garlic, chile, pepper 5 minutes
  2. Add carrots, corn, bamboo shoots, kidney beans, tomato sauce, soy sauce, coriander
  3. Bring to a boil, cover, simmer gently 30 minutes. Salt and pepper.
  4. Meanwhile, place noodles in bowl and cover with boiling water. Let stand 4 minutes. Rinse and drain.
  5. Stir cilantro into sauce. Toss with noodles.
