Roast Turkey with Orange Ginger Glaze

Ingredients: 

1 large orange, halved
1 fresh turkey (about 18 lbs)
paprika to taste
salt to taste
ground black pepper to taste
stuffing
4-6 T butter, softened

Orange Ginger Glaze

zest of 1 orange
1 1/2 C fresh OJ
1/4 C honey
3 T soy sauce
2 T finely minced fresh ginger
1 T minced garlic

Gravy

2 C pan juices
4 T butter
4 T flour
1/2 C Orange Ginger Glaze
1/2 t dried thyme
salt and pepper to taste


Directions for Roast Turkey

  1. Preheat oven to 325 F 
  2. Squeeze orange halves inside turkey.
  3. sprinkle cavities with paprika, salt and pepper
  4. place stuffing in cavity
  5. rub the turkey with butter and sprinkle with paprika, salt and pepper.
  6. Set turkey, breast-side up, on a rack in a roasting pan.
  7. Cover loosely with foil and roast for 2 hours bsasting twice. Remove foil, roast turkey for 2 hours, bastingh with pan juices every 30 min
  8. Raise oven temp to 350 and roast turkey for 1 hour, or until a thermometer inserted in the thickest part of the thight re3ads 170 F and juices run clear (breast should be 160 F
  9. During the last 15 minutes of roasting, brush the turkey with the Orange Ginger Glaze.
  10. Transfer turkey to a platter, cover with foil and let rest for 20 min before carving. 
  11. Reserve pan juices to make gravy.

Directions for Orange Ginger Glaze

  1. whisk ingredients and refrigerate, covered, overnight.
  2. Strain and brush glaze over turkey during the last 15 min of roasting.
  3. add 1/2 C to the gravy to blend flavors

Directions for Gravy

  1. Return 2 cups of pan juices to pan and stir, scraping up the brown bits, over low heat.
  2. Melt butter in a heavy pot over los heat.
  3. Gradually whisk in flour until it browns slihtly, 2-3 min.
  4. Pour in pan juices, whisking until smooth.
  5. Slowly bring the gravy to a boit to thicken.
  6. Reduce heat to medium-low and add 1/2 C Orange Ginger Glaze, thyme, salt and pepper.
  7. Stir until gravy has thickened, about 10 min.
  8. Thin with extra broth if needed
  9. Adjust seasonings if needed
