Ingredients: 

2 acorn squashes (about 1 1/2 lbs each)
2 Tbsp plus 1 tsp olive oil
salt and pepper
1 lb red grapes (about 3 cups)
1 large sweet onion, thinly sliced
1 1/2 Tbsp chopped fresh thyme
1 cup Trader Joe's Harvest Blend (or spelt, wheat berries, barley or other whole grain)
1 cup chicken broth
