Roasted Carrot Soup

I have the cookbook Yum & Yummer this recipe is from that amazing!!!! My other half is not a coup guy but came home from a friends raving about it .

Ingredients: 

2 lbs (907g) carrots peeled (or scrubbed) & coarsley chopped (app 4 cups)
1 small sweet potato,peeled and coarsley chopped(about 1 1/2 -2 cups)
1 med onion cut into large chunks
1 clove garlic peeled left whole ( i used 2)
1 tbsp olive oil or melted coconut oil
6 cups reduced sodium vegetable broth
2 tsp grated fresh ginger root ( a bit more)
2 tsp curry powder
1 tsp cumin
1 tsp corrianer
1/2 tsp each of freshly ground pepper and sea salt
1 cup of coconut milk (light or regular )
Chopped fresh cilantro for garnish optional
