Roasted Garlic

You can also wrap directly in foil and place in oven.

You can also keep the roasted cloves by storing them in a sterilized glass jar (drop the jar in boiling water for a minute or 2). Just put the cloves in the jar and fill up with olive oil until the cloves are totally covered by the oil.

The added bonus here is the oil, after a while the oil takes on the flavor of the garlic. I use the oil for salad dressings, grilled vegetables, roasted meats.

It keeps for about a month in the fridge, just make sure the garlic cloves remain covered with oil.
