Roasted garlic and red pepper dip

Ingredients: 

2 heads garlic
2 teaspoons plus 2 tablespoons olive oil
1 8oz package Neufchâtel cheese softened
1/3 cup chopped roasted red pepper
1/3 cup parsley
1/4 cup reduced fat sour cream
2 tablespoons lemon juice
1 teaspoon salt
2 teaspoons hot sauce


Heat oven to 400 f. Slice 1/2 inch from the top of each garlic bread. Place cut side up on a large sheet of aluminum foil. Drizzle with 2 teaspoons of the oil. Wrap tightly.
Roast about an hour, let cool.
Squeeze garlic cloves from the bottom of each head into a bowl then put into a food processor. Add remaining olive oil and the other ingredients and process until smooth. Chill and serve with exotic veggie chips.
