Ingredients: 

2 red bell peppers
1/2 cup olive oil
2 thick slices crusty bread
1 clove garlic, minced
1/2 cup roughly chopped tomato (1 medium)
3 tablespoons slivered almonds
1 tablespoon chopped parsley
1/2 tablespoon sherry vinegar
1/2 tablespoon lemon juice
Salt and pepper to taste
4 fillets salmon, about 2 pounds
