Ingredients: 

Pandan extract:
12-15 pieces pandan leaves, washed and snipped into 1/2-inch pieces
3-4 tablespoons water

Sugar syrup:
1 cup castor sugar
1/2 cup water
4-5 pieces pandan leaves

Rice layer:
1 cup glutinous rice, soaked overnight (or at least 6 hours) and drained
1 to 1 1/2 cups thin coconut milk
a pinch of salt
3 tablespoons freshly grated coconut (optional)

Custard layer:
1/4 cup plain flour
2 teaspoons corn starch
4 eggs
1 cup thick coconut milk
a pinch of salt
