Shrimp Stuffed Poblano Peppers

Ingredients: 

6 poblano peppers
1 large tomato, chopped
15 ounce can black beans, drained
10 ounces Wild American Gulf Shrimp, chopped, deveined and peeled
1/4 cup chopped cilantro
1/4 cup plain yogurt
1 1/2 cup grated mild cheddar cheese, divided
1 cup grated gruyere cheese
1/4 teaspoon salt
1/2 cup water
