Skillet Penne with Turkey Sausage, Sun-Dried Tomatoes, and Spinach

Ingredients: 

2 t olive oil
1/2 lb sweet or hot Italian turkey sausage, casings removed
3 garlic cloves, minced
1 can chicken broth
1 3/4 c water
1/2 c oil-packed sun-dried tomatoes, rinsed and chopped fine
2 c penne
6 oz (6 c) baby spinach
1 oz Parmesan cheese, grated (1/2 c)


  1. Heat oil in 12-inch nonstick skillet over medium-high heat until just smoking.  Add sausage and cook, breaking up meat with wooden spoon, until no longer pink, about 4 minutes.  Stir in garlic and cook until fragrant, about 30 seconds.
  2. Stir in broth, water, sun-dried tomatoes, 1/2 t salt and pasta.  Cook at vigorous simmer, stirring often, until pasta is tender and sauce has thickened, 15-18 minutes.
  3. Stir in spinach, one handful at a time, and cook until wilted.  Off heat, stir in Parmesan.  Season with salt and pepper to taste and serve.
