Souplantation Couscous

1 lb cooked and cooled whole wheat couscous
1 cup rinsed garbanzo beans
1 cup crumbled feta cheese
1 cup ¼” diced red bell peppers
1 cup ¼” diced celery
¾ cup ¼”diced artichoke hearts
¾ cup toasted pine nuts
½ cup ¼” sliced scallions
2 tablespoons finely chopped mint

DRESSING
6 tablespoons fresh lemon juice
2 teaspoons kosher salt
¾ teaspoon black pepper
½ cup canola oil
