Adapted from "Sinfully Easy Delicious Desserts," by Alice Medrich (Artisan; 2012). The crust can be prepared ahead up to the point of baking.

Ingredients: 

The crust
8 tablespoons (4 ounces) unsalted butter, melted
1/4 cup (1 3/4 ounces) firmly packed brown sugar
1/4 teaspoon salt
3/4 teaspoon pure vanilla extract
1 cup + 2 tablespoons (5 ounces) unbleached all-purpose flour
The filling
3 large eggs
1/4 cup (1 3/4 ounces) sugar
1/8 teaspoon salt
1/2 teaspoon pure vanilla extract
1 1/4 cups sour cream
1 large egg yolk, beaten with a pinch of salt
1 pint strawberries, rinsed, hulled and quartered; or 1/2 pint raspberries or ripe (not too tart) blackberries (optional)
