4 medium russet potatoes (8-10 ounces each), scrubbed
1 T extra-virgin olive oil
1 C diced onion
1 lb fresh spinach, finely chopped
3 cloves garlic, minced
1 T chopped oregano
⅓ C reduced-fat cream cheese
¾ tsp ground pepper
¼ tsp kosher salt
1 C crumbled feta cheese, divided
