Spiced Pumpkin Cheesecake

Ingredients: 

38 Nabisco ginger snaps, finely crushed
1/4 c peans, finely chopped
1/4 c butter, melted
4 pkgs (8 oz each) cream cheese, softened
1 c sugar
1 (15 oz) can pumpkin
1 T pumpkin pie spice
1 t vanilla
4 eggs
1 c thawed Cool Whip
1/2 t ground nutmeg


  1. Heat oven to 325 degrees.  
  2. Mix crumbs, nuts and butter.  Press onto bottom and 1" up side of 9" springform pan.
  3. Beat cream cheese and sugar with mixer until blended.  Add pumpkin, spice and vanilla.  Mix well.  Add eggs, 1 at a time, mixing after each until blended.  Pour into crust
  4. Bake 1 hour 20 minutes to 1 hour 30 minutes or until center is almost set.
  5. Loosen cake from rim of pan; cool before removing rim.
  6. Refrigerate 4 hours.
  7. Serve with dollop of Cool Whip and dusting of nutmeg.
