I think I would add a bay leaf to this.
2 lb stew meat, in 1 in" pieces
1/2 C flour w/salt & pepper to taste
1 lg onion, chunked
3 C potatoes, peeled and diced
3 C carrots, chunked
2 cloves garlic, minced
1 t Cajun seasoning
salt & pepper to taste
2 C beef broth
1 can (12 oz) V8
1 jar (20 oz) beef gravy
