Sweet Potato Casserole 3qt.

Notes: 

Adapted from the 1980 Southern Living Annual Recipe Book Cookbook. The original recipe called for more butter and sugar. I keep trying to reduce the amounts in the casserole base (not the topping). I have even used 1/4 c butter and 1/4 c sugar and it is still great.

Ingredients: 

Casserole:
6 cups cooked, mashed sweet potatoes
1/2 c butter , melted
1/2 c sugar
2/3 c milk
4 eggs
2 teas vanilla
Topping:
1 1/2 c brown sugar, packed
1/2 c all purpose flour
1/2 c butter
1 1/2c finely chopped pecans


  1. Combine all casserole ingredients and beat with mixer till smooth.
  2. Put in greased 3 qt. casserole.
  3. Top with topping.
  4. Bake at 350 for 45 min.
  5. Serves 12.
