1 3 - 3 1/2pound fresh beef brisket
2 teaspoons seasoned salt
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon garlic pepper
1/2 teaspoon ground cumin
6 - 8 mesquite, hickory, or pecan wood chunks*
1 recipe Spicy Beer Sauce
12 kaiser rolls, split and toasted (optional)
