Thersa Nennig stuffed peppers

Ingredients: 

6 green peppers halved and seeded
3 t salt
4 C minute rice
4 C water
1 1/2 lbs ground beef
1/2 C chopped onion
1 fresh garlic minced
1 jalapeno pepper (chopped and seeds removed)
1 quart salsa
12 slices velveeta


Preheat over to 350

Bring large 8 quart pot of water to a boil.  Add 1 t salt. Add green peppers and boil for 5 min. (peppers should turn from bright green to more of an olive green) Drain and set aside

Prepare 4 C. minute rice, 4 C. water and 1 tsp salt as directed.

Brown beef, onion, garlic, jalopeno and 1 t salt in skillet until beef is cooked - drain.

Put meat mixture in blowl and add cooked rice and salsa.  Stir together.  Put green pepper in 9x13 pan hallow side up.  Fill each pepper with the meat mixture, mounded high.  Put 1 slice of cheese over each pepper. 

Bake at 350 until mixture is steaming hot and cheese is melted - about 25 minutes.

Freezes well.
