Couscous(quinoa 1-1.5 cups/cook per pack.)
2 cups vegetable stock
1 tbsp lemon juice
2 tbsp olive oil(grape seed oil)
DRESSING
1/3 cup olive oil(grape seed oil)
1/4 cup lemon juice
2 garlic cloves/chopped fine
3 tbsp chopped fresh basil (! tsp dried up to 3)
1/2 tsp dried oregano
1/2 tsp salt/pepper
SALAD
1 english cucumber halved lengthwise and cut into 1/2 in slices (1 1/2)
2 tomatoes cut up (4/5 roma tomatoes)
1/2 pkg (250gr) feta cheese crumbled
1/3 cup nicoise olives black (1 10 oz can drained cut up)
1/2 cup thinly cut up red onion (not too much)
4 tbsp chopped fresh parsley
1/2 jar marinated artichoke hearts cut up, drained and halved app 1/2 of a can 14 oz can( i would use 3/4 to 1 can /I buy big huge jars @ costco and estimate)
