1/3 cup non-dairy milk (I like Plain Oat Milk)
1 teaspoon lemon juice or cider vinegar
3/4 cup whole wheat pastry flour
3/4 cup unbleached all-purpose flour
3 Tablespoons granulaed unrefined sugar (I like Sucanat), plus 1 teaspoon to sprinkle on dough
1 1/2 teaspoons aluminum-free baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon freshly grated nutmeg
1/3 cup non-dairy butter (I like Earth Balance or Smart Balance)
1 teaspoon vanilla extract
