Warm Pumpkin & Pearl Barley Salad

Ingredients: 

1 cup pearl barley
1 winter luxury pumpkin, peeled, cut into 2 inch chunks & roasted
3 Tbsp. maple syrup
3 Tbsp. olive oil
sea salt & pepper
1 cup baby spinach
1 cup arugula
1/2 cup pepitas
1/4 cup dried cranberries
"Sweet Balsamic Dijon Vinaigrette"

1/3 cup balsamic glaze (make a reduction or use pre-made glaze from Trader Joe’s like I did!)
1/2 cup extra virgin olive oil
2 Tbsp. dijon mustard
Sea salt & pepper to taste
