Zucchini Bread

Ingredients: 

3 eggs
2 c. sugar (granulated)
1 c. light flavour virgin olive oil (you can use regular olive oil or even vegetable oil, I just always use olive oil)
2 c. grated zucchini (I don't peel them at all, but you can if you want)
3 tsp vanilla extract
3 c. all-purpose flour (you can substitute 1 c wheat flour to make it a little healthier, I don't bother, but my mom does)
1 tsp salt
1 tsp baking SODA
1/4 tsp baking POWDER
3 tsp ground cinnamon


  1. Beat the eggs until light and foamy.
  2. Add the sugar, oil, zucchini and vanilla and mix on low speed.
  3. Combine the flour, salt, soda, baking powder and cinnamon and then add to the egg/zucchini mixture.
  4. Stir until well blended and pour into two 9x5x3 inch (ya know regular old size) GREASED loaf pans.
  5. Bake in pre-heated oven at 350° for 1 hour. Cool on rack for 15 mins before removing from pans.
