Zucchinni Cornbread

Ingredients: 

1/2 a medium zucchini, shredded (1 cup)
1 8.5 oz pkg corn muffin mix
1 c. shredded cheddar cheese (4oz)
1/4 c. milk
1 egg
1/4 tsp. cayenne pepper


Preheat oven to 400. Lightly coat twelve 2.5 inch muffin cups with cooking spray, set aside
Combine everything in a mixing bowl.
Spoon evenly into muffin cups
Bake for 11-14 minutes or until golden
