Baked Spaghetti Squash with Parmesan

Notes: 

Serves 2

Ingredients: 

1 medium spaghetti squash
8 TB butter
3 TB mixed herbs, chopped
1 garlic clove, crushed
1 shallot, chopped
1 tsp lemon juice
1/2 c Parmesan, grated
Salt and pepper


  1. Preheat oven to 350
  2. Cut squash in half lengthwise. Place halves, cut side down in a roasting pan.
  3. Pour a little water around it.
  4. Bake 40 minutes until tender
  5. May have to cover with foil
  6. Put butter, herbs, garlic, shallot, lemon juice in food processor and process until creamy. Season.
  7. Scrape seeds out of squash.
  8. Add butter and Parmesan to the squash and serve.
