Lentil and tomato soup

Ingredients: 

1 tbsp olive oil
1 onion chopped
1 clove garlic, crushed
1 tsp ground cumin
1 tsp ground coriander
1 cup red lentils
400g diced tomatoes
3 cups vegetable stock
Plain yogurt and mint, bread rolls to serve.


  1. Heat oil in large saucepan. Add onion and cook over medium heat for 4 mons or until soft. Stir in garlic, cumin and coriander. Cook, stirring 1 min or until fragrant.
  2. Stir in lentils, tomatoes and stock. Bring to the boil, reduce heat slightly and cook for 10mins, or until lentils are tender. Serve with plain yogurt and mint and rolls.
