For the meatballs-
250grms mince beef
250 grms Italian sausage meat (removed from their skins)
500 grms mince pork (or lamb)
110 grms grated Parmesan
1 whole egg
a good squirt of tomato puree
pinch of dried oregano
Handful of crushed crackers (not breadcrumbs)
Salt and pepper
For the tomato sauce-
5 cloves garlic minced
A few leaves of fresh basil
Good quality tomato passata – the whole jar
