2 Tbsp olive oil
1 medium white onion, finely chopped
2 garlic cloves, minced
1 tsp smoked paprika
1 Tbsp flour
1 1/2 cups vegetable (or chicken) stock
1 Tbsp tomato paste
1 bunch chopped kale
1 bay leaf
1/2 bag egg noodles (approx. 2-3 cups)
3/4 cup sour cream (or Greek yogurt)
salt and pepper
