Sundried Tomato Pesto Pasta

This is so simple and delish, when we splurge and have grains, this is a favourite.

gluten free pasta of choice, we prefer brown rice

1 can sundried tomatoes, quartered, reserve oil (get ones packed in olive oil)
1 head of fresh basil, washed, spun, and diced fine
4 cloves of garlic, pressed
1 cup pepitas (pumpkin seeds)
grapeseed oil to roast pumpkin seeds
2 cups olive oil
sea salt
