My first time making pot de creme, I don't think I had enough water when I baked them, they only seemed to half set.....the half that set was very good!
Oh how wonderful.
Would recommend making the dollops of caramel a bit smaller than expected - only because it's kind of hard to roll into the dough.
When making, be sure the caramel is in the MIDDLE otherwise you'll have an off-center cookie (but who care's it's still a cookie)
